Cornbread Dressing

2 cups fat (butter or from turkey)
2 cups finely chopped onion
8 cups finely chopped celery
18 cups fine cornbread crumbs
14 cups dried bread crumbs
2 TBSP salt
1-1/2 tsp black pepper
9 tsp poultry seasoning
4 cups broth or little more
8 eggs

Sauté onion and celery in some of the fat.  Mix bread crumbs, salt, pepper, poultry seasoning. Add 3/4 of the liquid and mix in. Add celery and onion and mix in. Add slightly beaten eggs. Combine and add remaining broth as needed.

Note: I run my bread thru processor so will be fine. I dry the bread in a low temperature oven.  Put in flat pans (9x13) and then pour some broth over the top. This will make a moist dressing.  Don't over stir.
