2 2/3 cups sugar
2/3 cup light corn syrup
1/2 cup water
2 egg whites
1/2 teaspoon almond extract
1/2 teaspoon vanilla
2/3 cup small pieces of nuts (optional)

Heat sugar, corn syrup, and water in saucepan over low heat, stirring constantly. Discontinue stirring once sugar is fully dissolved. Cook until mixture reaches 260 degrees or until small amount of mixture dropped into ice water forms a hard ball. Remove from heat.

Beat egg whites until stiff peaks form. Continue beating while slowly pouring hot syrup into egg whites. Add vanilla and beat until mixture holds its shape and loses its shine. Fold in nuts. Drop mixture from buttered spoon unto waxed paper. Cool for 20 minutes. Makes about 48 candies.

Tip: Do not try to make these on humid days as they don't set right.
