Peanut Brittle

2 cups sugar
3/4 cup light corn syrup
1/4 cup water
2 1/2 cups shelled peanuts
4 tsp. baking soda

Grease baking sheets well. In large, heavy saucepan cook sugar, corn syrup, and water until sugar is dissolved. Add peanuts; boil rapidly to hard-crack stage(300º). Do not stir while syrup is boiling, but shake pan several times.

Add baking soda; stir well. Pour onto baking sheets; spread as thinly as possible.

When cool, break into pieces.

Makes about 2 pounds.
