Potato Candy

There is no written recipe for this, Mother just always put it together.  Here is how we make it.

1 small, peeled potato, boiled.
Mash it well and add:
1 (1 lb) box of confectioners (powdered) sugar and a little vanilla, about 1 tsp.
Mix well and knead until smooth and blended.
Roll out on board sprinkled with powdered sugar and spread with peanut butter. Roll as for jelly roll and chill. Cut into slices.

Refrigerate candy.

P.S. You can double this recipe easily by boiling a medium potato and mix with powdered sugar until good consistency to roll out.
