Glazed Apple Cake

1 1/4 cup oil
2 cups sugar
2 eggs
3 cups flour
1 tsp soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
3 cups finely chopped apples (I chop in the cuisenart)
1 cup chopped nuts (I use pecans)
2 tsp vanilla

Mix oil, sugar and eggs. Add dry ingredients and beat well. Batter will be stiff. Add apples, nuts and vanilla. Mix well.  Bake in 9 x 13 pan, 350 degrees for 45 minutes.  Cake will appear slightly under done in middle.

Glaze:
1 cup sugar
1 tsp vanilla
1 stick oleo
1/2 tsp soda
1/2 cup buttermilk.

Mix glaze. Boil 3 minutes over medium heat. Poke holes in cake. Pour boiling glaze over warm cake. Serve with ice cream or whipped cream.
