Little Bit's Cheesecakes

Grandma used to make these with Sweeta®
12 vanilla wafers
10 packets Splenda®
11 ounces cream cheese, softened
2 eggs
1 1/2 teaspoons vanilla or lemon extract
Preheat oven to 350 degrees. Place paper baking cups in 12 cup
muffin pan. Place 1 vanilla wafer, flat side down, in each cup.
Using electric mixer, beat cream cheese and Splenda® until smooth
and well blended. Add extract and eggs, beating until fluffy. Fill
cups 3/4 full.
Bake 15 - 20 minutes or until centers are firm. Cool on wire rack
for 20 minutes. Cover and refrigerate at least 3 hours before
serving.
For a special touch, put 1 tablespoon of your favorite sugar-free
preserve on each cheesecake before just before serving.
