Lamb in a Bag

1 leg of lamb, about 5 lb.
1/3 cup olive oil
2 garlic cloves, crushed
1 teaspoon rosemary
1 teaspoon basil
½ teaspoon marjoram
1 teaspoon salt
1 tablespoon paprika
1 heavy brown paper bag
Pierce leg deeply with skewer.
Blend remaining ingredients, brush over meat, cover and let stand
for 2 hours (or overnight in the refrigerator).
Put lamb into a brown paper bag, twist closed.
Roast on baking sheet 325 degrees, about 25 minutes per pound for
medium rare.
Slit bag, place meat on platter.
Make gravy from juices. |
