Pacific Coast Peanut Noodles

Ingredients:

6 oz dry chow mein noodles, cooked, or 12 oz fresh chow mein noodles
1 cup snow peas (3 oz), tipped and tailed
2 teaspoons sesame oil - divided
2 Tablespoons crunchy peanut butter
1 Tablespoon brewed green tea (optional)
1 Tablespoon sugar
1 Tablespoon light soy sauce
1/4 cup NAKANO Red Pepper Seasoned Rice Vinegar
1 Tablespoon safflower or corn oil
1 clove garlic, crushed

Directions:

1. Bring a pot of water to a boil and add noodles.  Let boil about 1 minute for fresh noodles or about 5 minutes for dried.  Add snow peas to the boiling water for the last 15 seconds of cook time.  Drain immediately and rinse well with cold water. Toss with 1 tsp sesame oil.

2. Mix the peanut butter, tea (optional) and sugar together to make a smooth sauce.

3. Add remaining ingredients and stir in 1 tsp sesame oil.

4. Toss sauce with noodles and snow peas, making sure it fully covers them.

5. Serve by itself or with grilled steak or chicken.

Suggestions: Serve noodles over cleaned, dried garlic greens, steak or chicken slightly covering the noodles.
