Noodle Bowl with Pork Balls

600g Hokkien noodles
600g minced pork
4cm piece fresh root ginger, grated
1/4 cup chopped fresh coriander
1/2 cup dry breadcrumbs
1 egg, lightly beaten
peanut or canola oil for stir-frying
1 bunch Chinese greens, such as bok choy, cut into pieces
1/2 cup black bean sauce
1/4 cup light soy sauce

Place Hokkien noodles in a bowl and cover with boiling water. Set aside for 5 minutes, then drain well.  Place pork, ginger, coriander, breadcrumbs and egg in a bowl and mix well to combine. Divide mixture into 36 even pieces and roll into 36 walnut-sized balls. Heat a little oil in a wok or frying pan and fry pork balls, tossing well for 5-8 minutes to brown all over and cook through (this may need to be done in several batches). Remove to one side.

Add a little more oil and stir-fry Chinese greens for a couple of minutes. Add black bean and soy sauces, 1/4 cup of water, pork balls and noodles and stir-fry, tossing well for 5 minutes to heat through. Serve immediately.
