Caesar Pasta Salad

Ingredients (Metric / Imperial)
225 g spiral pasta / ½ lb
250 ml broccoli florets / 1 cup
250 ml cauliflower florets / 1 cup
125 ml cucumber, cut into large pieces /
½ cup
½ bell pepper, seeded & cubed /
½
250 ml Caesar dressing / 1 cup
75 ml parmesan cheese, grated / ⅓
cup
8 cherry tomatoes, halved / 8
30 ml lemon juice / 2 tbsp
Directions
Cook pasta al dente according to package directions. Drain and set
aside to cool. Cook broccoli and cauliflower until tender
crisp. Rinse under cold water and drain well.
Transfer broccoli and cauliflower to pasta. Add cucumber and pepper.
Add salad dressing and parmesan cheese. Toss. Add lemon juice and
tomatoes just before serving.
