Salmon, Cucumber, and Herb Salad with Chili Dressing

400g hot-smoked salmon
1 telegraph cucumber, cut in half, seeds removed
1 bunch spring onions, finely sliced
1 cup mint leaves
1 cup coriander leaves
1 cup basil leaves

CHILLI DRESSING

1/4 cup sweet chilli sauce
1/4 cup fresh lime juice
3 tablespoons Thai fish sauce
3 tablespoons sesame oil

Break up or roughly chop the salmon into medium-sized pieces. Thinly slice cucumber on an angle. Place all salad ingredients in a large bowl. Whisk the dressing ingredients together; drizzle dressing over salad and toss well. To serve, casually arrange salad on serving plates.
