Cajun Roughy Fillets

2   6 oz. Publix Orange Roughy Filets
1   clove garlic, minced
1 1/2 Tbsp. olive oil
Cajun seasoning

Thaw orange roughy according to labeled instructions.*

Mix garlic and olive oil together.  Paint or rub olive oil and garlic mixture on both sides of fillets.  Sprinkle with Cajun seasoning to taste.  Heat pan coated with additional olive oil to medium high heat.  Add fillets, cook 2 to 3 minutes on each side or until golden brown.

Serves 2.

* Thawing instructions: Best results are achieved when thawed in refrigerator 8-12 hours or overnight.  For quicker thawing, place fillets in colander under cold running water for about 5-10 minutes, gently rotating for even thaw.  Drain well.  Pat dry with paper towel.  Thawed fish is ready for preparation in your favorite recipe.  Do not refreeze the thawed product.
