New England Baked Haddock

A classic haddock recipe that's been a part of New England's fishing families for generations.

2  5 oz. Publix Haddock loins
1/2 cup bread crumbs (seasoned)
1/8 cup chopped fresh parsley
2 Tbsp. melted butter
1 lemon (cut into wedges)
salt and pepper to taste

Thaw haddock according to labeled instructions.*

Preheat oven to 350 º F.  Salt and pepper haddock loins to taste.  Combine melted butter, bread crumbs and half the chopped parsley.  Mix well and place on haddock.  Place haddock in a baking dish and bake for 15-20 minutes or until cooked through.  Serve onto plates and garnish with remaining chopped parsley and lemon wedges.

Serves 2.

* Thawing instructions: Best results are achieved when thawed in refrigerator 8-12 hours or overnight.  For quicker thawing, place loins in colander under cold running water for about 5-10 minutes, gently rotating for even thaw.  Drain well.  Pat dry with paper towel.  Thawed fish is ready for preparation in your favorite recipe.  Do not refreeze the thawed product.
