Deluxe Mashed Potatoes

4 to 5 large potatoes (about 2 1/2 pounds)
1 3 oz. package cream cheese, softened
1/2 cup sour cream
1 tablespoon chopped chives
3/4 teaspoon onion salt
1/4 teaspoon pepper
1 tablespoon butter or margarine
Paprika, optional

Peel & cube the potatoes; cover with water & cook until tender. Drain and mash until smooth (do not add milk or butter). Stir in the cream cheese, sour cream, chives, onion salt, & pepper. Spoon into a greased 1 1/2 quart baking dish. Dot with butter & sprinkle with paprika, if desired. Cover and bake at 350 degrees for 35-40 minutes or until heated through.

Yield: 4-6 servings.

I like this because you aren't making the mashed potatoes at the last minute and they have a little different flavor, but I have served them with chicken fried steak & gravy and we liked it.
